Chef Crawford also eschews imported goods like lemons and olive oil. And yet, for however avant-garde the backhouse’s procurement concept may be, Crawford’s food is entirely approachable.
Everyone in the kitchen must put in one day a week on the three acres of land backhouse rents from a local farmer to grow its produce. The point is to understand and appreciate what goes into taking food from seed to plate.
No matter where they’ve been, Chef Ryan Crawford and Beverley Hotchkiss, have celebrated Food Day Canada every year since its inception.
Guests are even invited to move between the two—they’re asked to come back and roast their own marshmallows on the wood fire to conclude their dining experience.
